Making dinner at the station tonight I was playing around with different ideas for squash. Here's what I came up with:
1 Butternut Squash
1 Acorn Squash
1lb of Bacon
A bit of garlic powder
a bit of brown sugar
Peel and Cube the squash. Set aside. Cook the bacon and remove from grease. After the bacon cools, cut it into bits. Saute the squash in the bacon grease, seasoning with garlic powder. After the squash is done to whatever level of softness y'all like, remove from heat, drain off the grease and add bacon. Sprinkle brown sugar over the top and mix in. Serve and enjoy.
Folks grabbing seconds (or thirds) is the highest form of flattery to me for my cooking, and I think all the guys had two servings.
